Andy Ives is a versatile man - the Head Chef at Farnborough International Exhibition and Conference Centre - he’s cooked on golf courses (with grass beneath his feet!) and and now in a venue synonymous with high tech aircrafts (with planes above his head!).
Appointed last month, Andy will be bringing over 30 years, hands-on experience to the fore. Gained across all styles of service - including large scale, VIP banqueting, events and catering within restaurants, ultra-luxe hotels, private members clubs and stately homes – and in a previous life with Sodexo…
He has been associated with Sodexo for many years, having held roles as Executive Chef at Knebworth House and the five-star Montcalm Hotel in Mayfair. Plus, during the 2012 London Olympics he ran the hospitality operation at Eton Dorney; serving 600 covers a day for breakfast, lunch and tea, as well as continuing on at the site to run the Paralympics green room, catering to celebrity guests in the ‘friends and family area.’ In addition to his work with Sodexo, he previously ran the kitchens at Sunningdale Golf Club, executing complex events such as The Seniors Open in 2015, to much acclaim from his employers and the Royal & Ancient.
Andy’s catering style is eclectic, flexible, and passionate. Building on a foundation of ‘classic cookery’, he has integrated numerous international flavours - including Japanese, Middle Eastern and Asian – into his vivid menus. He is known for delivering innovative dishes, creative ideas and practical plans (which deliver on even extreme client demands).
Complimenting his capabilities in the kitchen are Andy’s strong business and financial management skills. He is a dedicated teacher of young kitchen staff and has, several times, returned to his home county of Northamptonshire to speak as a guest lecturer and act as a judge in the “Young Chef of the Year” at the Northamptonshire Food & Drink awards.
Looking forward to the 10-year agreement will see Sodexo Prestige develop bespoke catering concepts Andy commented: “Farnborough International Exhibition and Conference Centre has a great aviation history and it’s a great opportunity to lead a team to bring new and exciting catering concepts that will add real value to this landmark destination.”
